Focacia bread na parang painting

Naka-suit at high heeled shoes, at laging ang bitbit ay laptop. ‘Yan si Arlene Thay noong bago magkaroon ng Covid 19 pandemic. Ngayon, naka-apron at laging bitbit ang baking tray at rolling pin. Pero maligaya siya sa kanyang bagong passion – paggawa ng focaccia artisan bread at yummy ensaymada.

“I have never baked before. I was an AVP for Brand Management of Digits Trading Corporation and Senior Brand Manager of National Bookstore. Nagko-consultancy work ako right before nagkaroon ng pandemic. I was a brand consultant and strategic management consultant for two companies – Primer and Hap Suy,” kuwento ni Arlene.

Pero nang magka-lockdown, nahinto rin ang kanyang trabaho. Naisip niyang gumawa ng mga tinapay habang nasa bahay lang. Natuto siyang mag-bake sa kakapanood sa YouTube at sa mga Facebook Groups tulad ng Bake Happy Manila at PH Home Baking at iba pang home cooking groups.

“At first, it was more of survival mode. I thought I need to learn to make bread in case wala nang makain. Takot mindset when ECQ first started. After baking my first successful loaf, I decided to try other breads. I didn’t plan on selling right away. But I was surprised when friends would say they would like to order. After I offered two kinds of bread sa subdivision namin, I got orders right away.”

Ang kanyang focaccia bread na dinekorasyunan niya ng mga red at green bell peppers, nuts at seeds, capers, olives, sibuyas at iba pang herbs ay naging mabenta dahil sa ganda ng pagkakagawa nito – parang painting.

“I love flowers kasi so I married baking with flowers,” ayon kay Arlene na magaling sa art kahit hindi siya professional artist.

Ang kanyang focaccia bread ay malutong sa ilalim at gilid lalo na kung ito-toast ulit pero malambot ang loob at naglalaro sa dila ang mga herbs at mild spicy at sweet na lasa ng bell peppers, olives at capers. Masarap itong isawsaw sa extra virgin olive oil o balsamic vinegar. Tinry ko isawsaw sa pesto at sa herb cream cheese, masarap din!

Narito rin ang maaari ninyong gawing dip para sa focaccia bread:

Paghalu-haluin ang
1/2 tasa ng olive oil
1/2 tasa ng balsamic vinegar
1/4 tasa ng ginadgad na parmesan cheese
5 butil ng bawang na tatadtarin ng pino
1 kutsaritang pinatuyong thyme.

Gumagawa rin si Arlene ng iba pang tinapay at ensaymada na napakalambot at hindi nagtitipid sa keso.

Hindi madaling mag-bake pero nag-eenjoy si Arlene sa kanyang ginagawa lalo na ang pagdedekorasyon ng kanyang artisan bread.

“Effort talaga sya especially with breads kasi you need to wait for it to rise/proof. Pero when I receive encouraging feedback, mas ginaganahan ako sa bago kong venture.”
